Chairman’s Reserve Rum

I can say hand on heart that Chairman’s Reserve is one of my most favourite rums and you can not get better quality at this price it is beautifully crafted and amazingly good value. I find that when I want to add a little more depth to a rum cocktail I can add some Chairman’s to give more complexity.

Tasting Notes: Amber liquid carries the gentle aroma of ripe banana and vanilla, plenty of caramelised fruit and a hint of chocolate enticing the lips to touch the glass, on the palate chocolate persists with cloves, tobacco and dried fruit followed by some baking spices that lightly tingle the tongue, the finish is long and drying with cream soda and cinnamon.

Serving suggestions: Yes all the favourites are there coke, lemonade and my favourite ginger beer. In a cocktail it is the ultimate Mai Tai rum I also use it in my Zombie blend and Rum Punch.

At one time St Lucia was home to huge sugar plantations and had a growing rum trade, but by the 1960’s all the plantations were forced to close due to the rise of European sugar beet which although inferior in quality could be produced cheaply by cutting out the delivery costs. Eventually the last two remaining distilleries joined forces and set up the St Lucia Distilleries Company and imported their molasses to the island from British Guyana. Their technique is to use multiple bars of molasses with various yeast strains and blends of column and pot still, giving a vast spectrum of flavour opportunities and to add a further touch of authenticity the water used to reduce the spirit is from purified water collected from the rainforest.

In the rum there are the flavours of the true spirit of Saint Lucia, it is an island of immense natural beauty of unspoiled rainforest, miles of golden sandy beaches and the famous Piton Mountains which are represented on the St Lucian flag as well as every bottle of Chairman’s Reserve Rum
